These Bliss Balls are Perfect for Snacking on the Go!

Warmer weather is here and we’re longing for the great outdoors.  We love going on family hikes, and are always looking for ways to simplify snacking on the go.  These bliss balls fit the bill perfectly. We like to fill a couple of our Medium Uno bento boxes with them to keep us energized all afternoon. They are super easy to make, and when we say easy, we mean easy. Four ingredients and a food processor are all you need, but this recipe is flexible enough to accommodate most of your favorite mix-ins. I like to toss in cacao nibs and nuts when I have them around.

1 cup (packed) pitted Medjool dates*⁠
1 cup almonds⁠
1/4 cup unsweetened shredded coconut plus a bit extra to sprinkle onto a plate for rolling ⁠
1/4 tsp salt⁠

*You can use cubed chopped dates, but you will need to soak them in water for a few minutes in order to rehydrate them before you use them.

Instructions:

Add the almonds to the bowl of your food processor, and pulse them until they’re finely chopped. Be careful not to pulse too long our you’ll end up with almond butter!  Then add all the other ingredients and pulse until it all comes together into a sticky dough.

Next, use your hands (or a cookie scoop if you prefer) to scoop dough out and roll into 1-inch balls.  Then sprinkle a plate with the extra coconut you set aside and roll the balls in the shredded coconut. Voila! You’re done! ⁠

These freeze well. We like to double the batch and freeze half in an air-tight container. They can be stored in a freezer for up to 2 months, making snacking on the go even easier!
