Chocolate Chunk Pumpkin Bread

Ingredients

  • Half of 1 can pumpkin 
  • 1 ripe bananas
  • 1 egg
  • 1 cup rolled oats (gluten-free)
  • 1/2 tsp baking soda
  • Pinch of sea salt
  • Pinch of nutmeg
  • Pinch of ginger
  • Pinch of pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 2 tbs pure maple syrup (or raw honey)
  • 1/4 cup dark chocolate chips (plus more for topping)

 

Directions

  • Blend all ingredients except the chocolate
  • Add in chocolate chunks
  • Bake in your bento at 350 for 45 minutes
